Public Hotels, NYC
Supported a complete overhaul of the infrastructure and programming for this $40M food and beverage operation at Ian Schrager’s newest offering in the Lower East Side.

Dean & DeLuca
While serving at the Chief Development Officer and Managing Director for this iconic specialty foods retailer, Jay led the market operations and developed the next generation of market stores with the design team from David Collins Studio in London.

The clocktower
For the signature restaurant at Ian Schrager’s New York EDITION, Jay Coldren crafted a partnership between Michelin starred Chef Jason Atherton and celebrated restaurateur Stephen Starr. The restaurant was awarded two stars from the NY Times.

Miami Beach Edition
Jay Coldren led the partnership and development work for this three outlet license agreement with chef Jean-Georges Vongerichten. The concepts included the celebrated Matador Room, an innovative all day Market and a classic Miami pool bar.

Jw Steakhouse
Working with a multi-disciplinary team from Marriott International, Jay led the repositioning efforts for the signature restaurant at the iconic Grosvenor House in London. The dramatic turnaround set the bar for new F&B development for Marriott.

The Inn at Little Washington
Jay Coldren served as the Director of Dining and Hospitality Services for this double 5 Star, double 5 Diamond Inn and restaurant in the foothills of Shenandoahs.

Berners Tavern
Called the ‘Restaurant of the Decade’ by the London press, this partnership with celebrated Chef Jason Atherton at the London EDITION generated more than 6M € in the first year of operation.

IndeBleu
Jay co-developed this innovative fine dining and ultra-lounge serving as the managing partner and GM in the first years of operation. Voted one of the 40 hottest restaurants in the world by Conde Nast Traveler.

LA Live
Led the concept and development of hotel dining at the JW Marriott LA Live. Concepts included four F&B venues including The Mixing Room bar and lounge and LA Market, a licensed partnership with rock star chef Kerry Simon.
